Paul Williams - Director of Chocolate Innovation (Wonka)

From a background in corporate finance of more than 20 years, Paul was made redundant and was finding it difficult to find another job in the midst of financial crisis. After reading an article online in the early hours one morning about chocolate making, he had the ‘mad’ idea of setting up his own chocolate company. A few days later he had booked himself on a course and set the ball rolling. Paul is a major foodie, be that eating out or cooking at home and its this enthusiasm for food that leads him to create such imaginative and exciting flavours, many of which are award-winning. Although his personal preference is for savoury, his favourite Choc Amor flavour is Kalamata Olive Oil because of the rich dark chocolate and smoothness the olive oil brings to the party. Paul Williams said: “How can you explain how good it is to be a chocolatier. You get to play Willy Wonka everyday! What could be better?” In addition to being the master of chocolate innovation and creation, Paul is happiest when talking to his customers and bringing to life the chocolate eating experience by demonstrating how to eat his chocolate!

Jacqui Williams - Director of Operations ( & Chief Chocolate Taster)

Jacqui’s background is in textiles sales, seeing new products through from the briefing stage to their arrival in store. So, when Paul decided to set up a chocolate business, Jacqui was keen to get involved in setting up the company branding and supporting Paul in the background, whilst still working full time. Based on the success of Choc Amor in its first year, Jacqui took the decision to leave her corporate career and join Paul full time, indulging her own passion for chocolate and baking. Today, Jacqui heads up sales, marketing and implementation for Choc Amor and ensures that Paul’s chocolate creations not only taste amazing but that they look just as good as they taste! Jacqui’s favourite Choc Amor flavour is Salt Liquorice because she not only loves liquorice, but feels that salt and chocolate work perfectly together. On days when she needs something sweeter, she would choose Salt Caramel Blonde. Jacqui Williams said: “I have always loved product development as its hugely satisfying seeing something going from an idea to a fully finished product on the shelf that customers are going to love and what could be better than doing that with chocolate!”
